How to Select the Commercial Soft Serve Ice Cream Machine?

  1. Countertop or floor model
  2. One tank single flavor, or 2 tank 3 flavor, or more tanks to serve mroe flavors. 2 Tank 3 flavor is the most popular. For more flavor, it may make the customer hard to make a selection, and the machine is too big and too heavy.
  3. Mix hopper with or without refrigeration. The mix hopper with refrigeration is quite useful to keep the ice cream mix fresh in the mix hopper. The mix hopper refrigeration system is a separate system or not. But the machine without this function could be more economic.
  4. Keep-fresh system. During long no sale period or keep the mix in the mix hopper overnight, the keep-fesh system could help save the energy consumption. And make it possible not to do the cleaning daily. But it is suggested to clean the machine daily, or every three days, or every one week for hygenic consideration.
  5. Brand and power of the compressor. Generally, the manufacturer’s native brand is more economic because with the overseas transportation cost and import tax. The bigger power compressor is more powerful, stronger refrigeration ability, faster freezing speed, bigger production capacity.
  6. Throttling device: capillary tube or expansion valve. Capillary tube is more economic. Expansion valve is more efficient refrigeration. The orifice of the expansion valve could be adjusted to adjust the machine refrigeration performance if necessary. The capillary tube could not be adjusted.

Generally, the bigger power compressor, the bigger freezing cylinder, has a stronger continuous dispensing ability. Consider the peak time serving requirements, not bigger production capacity is better. Suitable is fine. Too big production capacity will make the waste.
  12. Pump fed or Gravity fed. Gravity fed is more common and more widely used, because more economic more affordable, more simple installation and easier cleaning. Pump fed is higher ice cream overrun, more volume ice cream with the same weight of ice cream mix. could increase the profit margin of each serving. The ice cream taste more smooth and fluffy. but the pump fed system make the machine more expensive, more complicated in installation and cleaning. There is an economic solution to increase the air volume in the ice cream and widely being used.
  13. Hopper agitator. For the mix hopper refrigeration system, the cold is generally transfer from the hopper’s wall to the center by nature’s transfer, the cold transferring speed is some slow. With the help of the hopper agitator, the cold from the hopper’s wall could more fastly and efficiently transfer to the center of the mix hopper. and prevent ice building up on the hopper’s wall.
  14. Mix low alert system. With this system, when the mix hopper is low of mix, the machine will alarm and alert the operator to refill the ice cream mix in time. If without this system, the operator may need to open the over to check if it is time to refill the ice cream mix.
  15. Syrup system. The syrup system is used to pipe the syrup flavorings to the ice cream, to make the ice cream more funny more nice more delicious and more attractive. But the built in system generally make the cleaning more complicated. The sauce bottle or pump condiment dispenser is a good solution to add syrup or flavorings onto the ice cream.
  16. Pasteurizer system. The pasteurizer system help to kill the possible bacteria. Generally, the machine designed with the pasteurizer system could make the cleaning cycle much longer. But it also increase the machine cost much. And not all the mix could be pasteurized. For example, the frozen yogurt soft serve, could not be pasteurized.
  17. Control system. If the machine is of microcomputer control. the machine with microcomputer control could work more intelligently, more user friendly.
  18. Power supply. 220V or 110V? 50Hz or 60Hz?
