How to Make Gelato Using a Commercial Gelato Machine?

Preparing the Gelato mix:

1. You can either use the gelato powder or gelato base.

2. Add the prepared gelato mix through the feeding chute into the freezing cylinder. Make sure not to exceed half of the cylinder’s capacity or go below 30% of the cylinder’s capacity.

3. The gelato mix should be either pre-chilled at 4 degrees Celsius or at room temperature. Do not pour hot gelato mix into the freezing cylinder.


Starting the Gelato Production:

1. Activate the automatic gelato production mode on the gelato machine. If the machine offers multiple production modes such as temperature mode and time mode, select the desired mode before starting the automatic production.

2. Generally, after approximately 15 minutes of starting the automatic gelato production mode, the gelato will be ready.

3. Using pre-chilled gelato mix will result in a faster freezing time compared to using the mix at room temperature.


Discharging the Gelato:

1. Place a container or bucket for collecting the gelato under the discharging hole.

2. Open the discharging cover and start the discharging mode to release the gelato. Keep discharging until no more gelato comes out.

3. Press the discharging button again to stop the discharging.

4. Open the cylinder cover and use a long scraper to remove any remaining gelato from the cylinder.


Continuing Gelato Production:

1. Close the discharging cover if you plan to make the same flavor of gelato again.

2. Add the gelato mix for the next batch and repeat the above steps to continue producing gelato.


Switching Flavors or Cleaning the Machine:

If you need to switch to a different flavor, or if it’s time to clean the machine, follow these steps.

1. Fill cleaning water into the cylinder.

2. Activate the automatic cleaning mode, one cleaning cycle usually takes around 3 minutes.

3. Open the discharging cover to drain the cleaning water. Repeat this step until the drained water becomes clear.


Storing or Serving the Gelato:

1. If you have a blast freezer, place the gelato in it for approximately 10 to 15 minutes before transferring it to a regular freezer for storage.

2. If you plan to display and sell the gelato in an ice cream showcase, take it out from the freezer and place it in the showcase.

3. If you need to transport the gelato, remove it from the freezer and place it in an insulated box for delivery to the desired location.
